Banana and Coconut Parfait
Yield: 2 large parfaits
Ingredients
- 1 can coconut milk
- ⅓ cup chia seeds
- 4 tbsp maple syrup, divided
- ½ teaspoon vanilla extract
- 2 large bananas
- Hippie Snacks Sweet Coconut Seed & Nut Clusters
- ½ cup raw cashews, soaked for 6 hours in water
- 1 tbsp lemon juice
- ¼ tsp salt
- ½ cup water
Method
- For the chia pudding layer: combine the coconut milk, chia, 2 tablespoons of maple syrup and vanilla in a bowl and set aside for one hour to thicken.
- For the cashew cream: drain the cashews from the water they have been soaking in. In a high-speed blender add the soaked cashews, lemon juice, salt, 2 tablespoons of maple syrup and water. Blend until smooth.
- Slice the bananas.
- Layer the sliced bananas, coconut cream, chia pudding and Hippie Snacks Sweet Coconut Seed & Nut Clusters
- Serve immediately.
