For the chia pudding layer: combine the coconut milk, chia, 2 tablespoons of maple syrup and vanilla in a bowl and set aside for one hour to thicken.
For the cashew cream: drain the cashews from the water they have been soaking in. In a high-speed blender add the soaked cashews, lemon juice, salt, 2 tablespoons of maple syrup and water. Blend until smooth.
Slice the bananas.
