Place your asparagus spears on a lined baking sheet. Drizzle with a tsp of olive oil, salt and pepper. Roast in the oven for 10 minutes, or until tender.
Meanwhile, prepare the dressing by whisking the vinegar, olive oil, dijon mustard, salt and pepper.
Prepare the mixed greens, sliced cucumbers and tomatoes. Top with roasted asparagus, sauerkraut and Hippie Snacks Seed & Nut Clusters. Dress with the vinaigrette and serve immediately.
