Rainbow Spring Salad
Yield: 2 salads
Ingredients
- mixed greens
- ½ cucumber, sliced
- cherry tomatoes
- organic sauerkraut of your choice
- Hippie Snacks Seed & Nut Clusters
- 1 bundle of asparagus
- olive oil
- salt and pepper
For Dressing:
- 4 tbsp champagne vinegar
- 1 tbsp olive oil
- 1 tbsp dijon mustard
- ¼ tsp salt
- pepper to taste
Method
- Preheat oven to 400 degrees.
- Place your asparagus spears on a lined baking sheet. Drizzle with a tsp of olive oil, salt and pepper. Roast in the oven for 10 minutes, or until tender.
- Meanwhile, prepare the dressing by whisking the vinegar, olive oil, dijon mustard, salt and pepper.
- Prepare the mixed greens, sliced cucumbers and tomatoes. Top with roasted asparagus, sauerkraut and Hippie Snacks Seed & Nut Clusters. Dress with the vinaigrette and serve immediately.
