Healthy Homemade Granola Bars

Back to school season is coming soon and you are probably looking for healthier lunchbox snack options. Look no further! These healthy homemade granola bars are easy to assemble and to prep in advance for the week. They make a delicious on-the-go breakfast and a great pick-me-up snack during the day!

If you’ve never tried to make your own granola bars, it’s time to step up your breakfast game!

Our Hippie Snacks organic Chili Lime Clusters bring a nice spicy touch to this granola, but the recipe will also work great with our Superseed Coconut Clusters or Sesame Coconut Clusters. Made from nutrient-packed seeds, these homemade granola bar deliver unforgettable flavour and crunch. We love making these granola bars with True Bees honey because we know how much passion and love this company has for the bees, their farm and the community.  For a great Vegan option, these bars can also be sweetened with Bumble Bloom plant-based honey alternative.

 

Yield: 8 bars

Ingredients

  • 1/2 cup almond butter
  • 1/4 cup ghee, melted
  • 2 teaspoons vanilla extract
  • 4 tbsp True Bees Honey

DRY INGREDIENTS

  • 1/2 cup sliced almonds
  • 1/3 cup pumpkin seeds
  • 1 cup rolled oats
  • ½ cup hippie snacks organic chili lime coconut clusters
  • 1/2 teaspoon cinnamon

Method

  1. Line a a loaf pan, size 9 inches x 5 inches, with parchment paper. Set aside.
  2. In a small saucepan over low heat, simmer the almond butter, ghee, vanilla and honey
    until it turns into a thin sauce.
  3. In a large mixing bowl, add the dry ingredients sliced almonds, pumpkin seeds, coconut
    clusters and cinnamon. Stir to combine.
  4. Pour the nut butter mixture onto the dry ingredients and stir until evenly combined.
  5. Transfer the mixture into the prepared loaf pan. Press evenly the mixture with your hand
    to leave no air. Flatten the surface with a spatula.
  6. Freeze for 20 minutes until the breakfast bars are hard and set.
  7. Remove from the freezer, lift the parchment paper to pull out the bar from the loaf pan.
  8. Place on cutting board and cut into bars.
