So while we suspected her to secretly be Jamie Oliver’s BFF (only plausible explanation, right?), her passion for food actually comes from wanting to re-create restaurant experiences at home with healthier ingredients for her family and friends.

 

Chia seeds are one of the most nutritious foods on the planet. Loaded with fiber, protein, omega-3 fatty acids and various micronutrients, they are also full of antioxidants. Both satisfying for the eyes and the tastes buds, you can adapt this recipe to whatever fruits are in season/in your fridge! Plus, you don’t even have to be a morning person to enjoy this wholesome breakfast, make it the night before and store overnight for the right consistency… the best way to start you day!

Coconut mango pudding

Yield: 1

Ingredients

  • 1 cup unsweetened almond milk
  • ¼ cup chia seeds
  • 1 tsp vanilla extract
  • Pinch of cinnamon
  • ½ cup fresh sliced mango
  • ¼ cup fresh blackberries
  • ¼ cup Hippie Snacks Coconut clusters

Method

  1. Mix together the almond milk, chia seeds, vanilla extract and cinnamon into a mason jar.
  2. Put the lid on and shake well. Store overnight in fridge or at least 2 hours for pudding to thicken. Can add more chia seeds or do a quick spin in the blender if you want a thicker consistency.
  3. Add in sliced mango and blackberries (can substitute for any fruit that is in season or frozen berries) and top with Hippie Snacks Coconut clusters.
  4. Take a big scoop out and enjoy!
