Banana and Coconut Parfait

Yield: 2 large parfaits

Ingredients

  • 1 can coconut milk
  • ⅓ cup chia seeds
  • 4 tbsp maple syrup, divided
  • ½ teaspoon vanilla extract
  • 2 large bananas
  • Hippie Snacks Sweet Coconut Seed & Nut Clusters
  • ½ cup raw cashews, soaked for 6 hours in water
  • 1 tbsp lemon juice
  • ¼ tsp salt
  • ½ cup water

Method

  1. For the chia pudding layer: combine the coconut milk, chia, 2 tablespoons of maple syrup and vanilla in a bowl and set aside for one hour to thicken.
  2. For the cashew cream: drain the cashews from the water they have been soaking in. In a high-speed blender add the soaked cashews, lemon juice, salt, 2 tablespoons of maple syrup and water. Blend until smooth.
  3. Slice the bananas.
  4. Layer the sliced bananas, coconut cream, chia pudding and Hippie Snacks Sweet Coconut Seed & Nut Clusters
  5. Serve immediately.
